Easy Quinoa Dishes – #1 w/ Lamb


Amazing Quinoa and LambHey ya’ll…what’s the craze??

Quinoa! pronounced – (Keen-wah)

And it falls in the spinach, chard, beets family group… Hmmm did ya know that?

Well it’s not just a crazy phase. It’s actually a great grain with wonderful health benefits and to add to that, it is a universal food item you can literally add to any dish!!

Simple benefits everyone can be happy with:

It’s high in protein containing 9 amino acids, contains iron which is great for oxygen transport to muscles, cells and your brain. It’s rich in magnesium which helps relax blood vessels….ahhh so it’s good for migraines… Give it a try next time you have a headache.

So let’s start with a simple quinoa dishes you can make any day of the week. I prefer red or black quinoa to keep with my ‘no white’ product.


1 cup of quinoa

2 cups water

4 oz lamb (leg of lamb preferred)

1 ea. Bell pepper (red, yellow, green)

2 Squash

1 Zucchini

1/4 cup shredded carrots

1 Honey Crisp

8 oz White sharp cheddar

4 oz goat cheese

Hemp oil


Celtic salt


Raisins (optional)

Avocado (optional)

Total cooking time: approx 40 mins

Total prep time: 5-10 mins

**Cooking Quinoa is easy.  You cook it the same way you cook rice…2 to 1 water to grain.

Boil water in a sauce pan add quinoa

Bring to a boil and turn heat down to low

Simmer for 15 mins

If any water remains; drain and eat or store for later.

You can add Lamb or salmon or another rich protein…(Hard boiled egg too).  For this recipe  I added lamb.

So go ahead and start grilling your lamb. Just add peppercorn and Celtic salt turn a couple times making sure meat is cooked to 145°…approx. 10-15 mins.

For this dish I combined sliced bell peppers, squash, zucchini and honey crisp apples, drizzle with hemp oil & crushed peppercorn (no celtic salt because we are adding sharp cheddar cheese; natural salt) in a baking dish. Bake for 5-7mins at 350°

Take out of the oven and top with the cheese. Put back in the oven until melted approx. 2 mins.

Now let’s put it together…

Put quinoa on a plate

Top with a nice layer of the cooked veggies with the cheese

Add the cooked lamb

Sprinkle with carrots, lime juice and goat cheese and raisins if you like.

What really would set this dish off is some avocado!!  Yes avocado!!  Add some slices on top and dig in.  You will love the crunch of the veggies, the creaminess from the cheese and avocado and the quinoa fills you up.  All in all a really good recipe.  Give it a try, and let me know what you think.
